How to Make Creamy Cucumber Carrot Salad
1. Wash the Produce
Rinse the cucumbers, carrots, apple, green onions, and herbs under clean running water.
The CDC’s food-safety guidance recommends rinsing fresh fruits and vegetables and keeping hands and preparation surfaces clean to reduce foodborne-illness risk.
Do not wash produce with dish soap, bleach, or household cleaner.
2. Cut the Cucumbers
Trim both ends of the cucumbers. Slice them into thick rounds, then cut the larger rounds into halves or quarters if desired.
The pieces should be substantial enough to remain crisp after mixing with the dressing.
3. Salt and Drain the Cucumbers
Place the cucumber pieces in a colander and sprinkle them with approximately ¼ teaspoon salt.
Allow them to drain for 10–15 minutes. Gently pat the pieces dry with a clean towel or paper towels.
This optional step removes some surface moisture and helps prevent the dressing from becoming watery.
Do not leave the cucumbers heavily salted for an extended period, or they may become too soft.
4. Prepare the Carrots
Peel the carrots and cut them into small, even cubes. Try to keep the pieces smaller than the cucumber chunks because carrots are firmer.
Alternatively, slice them thinly or grate them.

5. Prepare the Optional Apple
Core the apple and cut it into small cubes similar in size to the carrot pieces.
Peeling is optional. Keeping the skin adds colour and texture, but peeling produces a softer result.
Toss the pieces with a small amount of lemon juice if they will not be mixed immediately.
6. Make the Creamy Dressing
In a small bowl, combine:
- Greek yogurt
- Mayonnaise
- Lemon juice or vinegar
- Dijon mustard
- Optional honey or sugar
- Garlic powder
- Black pepper
- Remaining salt
Whisk until smooth. Taste the dressing before adding it to the vegetables.
It should taste slightly stronger than necessary because the vegetables will dilute its flavour.
7. Combine the Salad
Add the drained cucumbers, carrots, optional apple, green onions, and herbs to a large mixing bowl.
Pour the dressing over the ingredients and fold gently until everything is evenly coated.
Avoid aggressive stirring, which may bruise the cucumber and make the mixture watery.

8. Chill Before Serving
Cover the bowl and refrigerate the salad for 15–30 minutes.
This short rest improves the flavour while preserving the vegetables’ crisp texture.
Stir gently before serving and adjust the seasoning if necessary.
