Cabbage
Savoy cabbage is particularly suitable because its leaves are flexible and have an attractive texture. Regular green cabbage is more widely available and also works well.

How to Make Cheesy Potato Stuffed Cabbage Rolls
Step 1: Cook the Potatoes
Peel the potatoes and cut them into evenly sized chunks. Place them in a large saucepan and cover them with cold water.
Add a generous pinch of salt and bring the water to a boil. Reduce the heat and cook for approximately 15–20 minutes, or until the potatoes are completely tender when pierced with a fork.
Drain them thoroughly and return them to the warm saucepan for one minute. This allows excess moisture to evaporate.
Step 2: Prepare the Cabbage Leaves
Bring a large pot of salted water to a gentle boil.
Remove any damaged outer leaves from the cabbage. Carefully remove the core with a small knife.
Lower the whole cabbage into the simmering water. As the outside leaves soften, remove them individually with kitchen tongs. Transfer them to a tray or colander to cool.

Step 3: Prepare the Onion and Garlic
Melt one tablespoon of butter in a skillet over medium heat.

Add the minced garlic and cook for approximately 30 seconds. Remove the skillet from the heat before the garlic begins to burn.
Step 4: Make the Cheesy Potato Filling
Mash the warm potatoes with the remaining butter, sour cream, and warm milk.
Add the sautéed onion and garlic, cheddar, mozzarella, salt, pepper, thyme, and optional paprika.
Mix until combined. Avoid excessive mixing because it can make the potatoes gummy.
Taste the filling and adjust the seasoning. Remember that the cabbage has a mild flavor, so the filling should be well seasoned.

Step 5: Fill and Roll the Cabbage Leaves
Preheat the oven to 375°F or 190°C.
Place one softened cabbage leaf on a cutting board with its inner side facing upward.

Place approximately ⅓–½ cup of potato filling near the stem end. The exact quantity depends on the leaf’s size.
Fold the bottom of the leaf over the filling, fold both sides inward, and roll it into a neat parcel.
Do not roll it excessively tightly. The cabbage and filling need a small amount of room as they heat.
Repeat with the remaining leaves and filling.

Step 6: Arrange the Rolls
Brush a baking dish lightly with butter or olive oil.
