Why Use Feta and Greek Yogurt?
Feta supplies the tang that balances sweet roasted beets. Greek yogurt makes it easier to blend into a spreadable base and softens some of feta’s saltiness. Full-fat yogurt generally produces a richer texture, but another plain Greek yogurt you enjoy will work.
Feta varies in saltiness and moisture. Taste the whipped mixture before adding any additional salt; it may need none.
A Note About the Herbs
Rosemary is distinctive and can become overpowering when used heavily. The recipe uses only a small amount of chopped rosemary, with optional sprigs for appearance. Parsley supplies the main fresh-herb flavor. Thyme or dill can be used instead if you prefer.
How to Make Roasted Beet Salad with Whipped Feta

1. Heat the Oven and Prepare the Beets
Heat the oven to 400°F (200°C). Line a small baking tray with parchment for easier cleanup.
Trim the beet greens and long roots if needed. Scrub the beets under running water to remove soil, then pat them dry. Leave the skins on for roasting; they are easier to remove afterward.
Place the beets on a large piece of foil or in a covered oven-safe baking dish. Drizzle with the tablespoon of olive oil and sprinkle with salt and pepper. Wrap the foil into a sealed packet, or cover the dish securely. Set it on the baking tray to catch any juices.
Covering helps the beets cook through without the cut surfaces drying out. The wedges are cut after roasting, giving them tender centers and clean, bold edges.

2. Roast Until Tender
Roast for 45–65 minutes, depending on beet size. Start checking smaller beets at 45 minutes. A thin knife or skewer should slide into the center with little resistance.
Ovens and beets vary, so tenderness is more reliable than a fixed time. If one beet is ready before the others, remove it and return the remaining beets to the oven.
Let the roasted beets cool until they are comfortable to handle. Rub away the skins with a paper towel or use a small knife where necessary. A pair of kitchen gloves can help prevent stained fingertips. Cut the peeled beets into generous wedges.
For the best presentation, keep the wedges fairly large. Tiny pieces release more juice and can quickly turn the whipped feta pink.
3. Whip the Feta
While the beets roast, add the feta, Greek yogurt, olive oil, lemon zest, and lemon juice to a food processor. Blend until creamy, scraping down the sides as needed.
The mixture should be thick enough to hold soft swirls on a plate. If it seems too firm to spread, blend in 1 teaspoon of cold water at a time until it loosens slightly. If it seems thin, refrigerate it while you finish the recipe.
Taste before making adjustments. Feta already brings plenty of salt, but you may want a little more lemon for brightness.
No food processor? Mash the feta thoroughly with a fork, then whisk it with the yogurt and other ingredients. It will be less smooth but still delicious. For a finer texture without a processor, push the mashed mixture through a sturdy sieve.
4. Toast the Walnuts
Put the walnuts in a dry skillet over medium-low heat. Cook for 3–5 minutes, stirring often, until they smell fragrant and look a little darker. Transfer them to a plate immediately so they do not keep cooking in the hot pan.
Let them cool, then roughly chop any large pieces. Walnuts can go from toasted to bitter quickly, so stay close to the stove.
5. Make the Dressing
Whisk the olive oil, lemon juice, and honey together in a small bowl. Add a few grinds of black pepper. Taste it with a beet wedge: the dressing should brighten the beet rather than make it sharply sour.
The amount is modest on purpose. The cheese is already creamy, and the roasted beets should look lightly glossy rather than sit in a pool of dressing.
6. Dress and Assemble
If the beets have released a lot of liquid, blot them lightly before dressing. Toss the wedges gently with about half of the dressing.
Spoon the whipped feta onto a wide serving plate and spread it into a thick, uneven layer. Arrange the beet wedges on top. Scatter over the toasted walnuts, parsley, and finely chopped rosemary. Add the optional feta crumbles and drizzle with the remaining dressing.
Finish with black pepper and a few small rosemary sprigs if you like. Serve the roasted beet salad with whipped feta immediately, or chill the assembled plate briefly before serving. For the cleanest white cheese base, assemble it close to mealtime.
