Instructions:

  1. Prep Peaches
    • In a large bowl, toss peaches with lemon juice, vanilla, cinnamon, nutmeg, and 3/4 cup sugar
    • Let macerate 15 minutes while oven preheats to 375°F (190°C)
    • Drain juices into saucepan, whisk in cornstarch, and cook over medium heat until thickened (3-4 minutes)
    • Combine thickened syrup with peaches

    • Whisk together flour, sugars, baking powder, and salt

    • Stir in milk and vanilla just until combined (don’t overmix)
  3. Assemble & Bake
    • Pour peach mixture into 9×13″ baking dish
    • Drop spoonfuls of dough over peaches (leave some gaps for steam)
    • Sprinkle with coarse sugar
